Day One Hundred and Ninety Seven
Carob Coconut Slice (adapted from Mum's awesome choc coconut slice recipe)
1 cup self raising flour
1 cup coconut
1/3 cup brown sugar
125g nuttelex
Combine dry ingredients, add melted margarine and mix. Press into a lamington tin and bake at 180 degrees (or 350 if you're oven is Farenheit like mine...) for 40 minutes.
Thick carob icing
2 cups icing sugar
2 tsp plain flour
1/2 cup carob powder
Sift dry ingredients, and slowly stir in enough hot water to make a thick delicious icing. Ice the slice and try not to eat it all in one go. I find giving some away helps.
